“For Soured Milk” by Jeremy Paden

We give thanks and praise
For the curds and the whey
For how heat and acid make proteins curl up and contract

And to our Neolithic ancestors
With their pottery sieves
Who moved through the world
With the patience and wonder of scientists
For whom the world was their laboratory
And their belly their Bunsen burner and beaker
We give thanks and praise
With lives no longer poor, nasty, brutish

For what they have handed down to us
A knowledge of mushrooms, of flowers edible
Of yaks and goats and sheep and reindeer

For the flat cakes and toasted grain breads
For yeast and its slow rise
For all things that depend on fermentation
We give thanks and praise

To our ancestors
For the work they’ve done to turn death into life
We give thanks and praise

For soured milk and the miracle
Of the transformation of this watery substance
Into curd which we spread on crackers
Shave over pasta, crumble on salads

For soured milk and how it pairs so well
With bread and beer and wine
We give thanks and praise
